"Cuvee de la Maison" - the blend of the House - is two barrels of Puligny Montrachet Doug selected from 9 Sylvain Bzikot made in 2010 from the fine Les Petites Nosroyes vineyard. From first opening, generous aromas of lemon curd, grilled pineapple, apricot, fresh butter, toasted nut, crushed mint, and a light touch of toasted oak. In the mouth, the perfect balance of richness, minerality, and cut that we love in top white Burgundy. The palate has the wonderful transparency critics are raving about in 2010, with pure flavors of lemon, golden apple, tangy pineapple, chervil and mint, and wet stones.  The aromas and flavors are all about purity and balance, but there’s a sneaky richness here and the weight of a top 1er Cru.  I love everything about the wine, but I’m most excited about the finish, which is just fantastically long and pure and mouthwatering as the lemon curd, pineapple, grilled nut, butter, and mineral flavors go on and on and on.

This is a baby today, and if you decant it (or wait a few years in cellar), you’ll find greater depths of flavor, more richness, and a growing sense of power to go with the precise, almost translucent, flavors and palate sense.  What you won’t find is a heavy sense of oak, because even though this wine was raised in two brand new (if lightly toasted) French oak barrels, the concentrated fruit Sylvain farmed in the Les Petites Nosroyes vineyard has gobbled up the wood and shines through with freshness, precision, and verve.  I love this stuff, and hope you will too.

“Outstanding. Moderate golden color. A perfumed nose of straw, citrus and white peach leads to intense, delicious and beautifully well-detailed middle weight flavors culminate in a long, mouth coating and impressively long finish. I quite like this as there is just a touch of backend austerity that confers a "clean" and refreshing character to the finish without falling over into severity. In sum, lovely juice with 3 to 5 years of upside potential, perhaps a bit more.” Allen Meadows 91 points

A pretty and attractively scented nose features notes of citrus, baking spice, lychee nut and rose water that precedes the nicely rich, round and relatively powerful medium-bodied flavors that possess excellent focus and drive on the impressively long and mineral-driven finish. After two hours in a decanter, this was a radically different, and better, wine than when it was initially opened.” Allen Meadows 91 points

“From a steep, rocky section of vines above the Caillerets, the Marc Morey 2007 Chassagne Montrachet En Virondot offers an aromatic and gustatory combination of brine and meat stock mingled with fresh lemon – along with an eventually sense of overt chalkiness – remind me of Chablis. Crystalline mineral aspects seem to shimmer through the citrus, leading to a refreshing and invigorating finish. Some tasters might find this lacking in sweetness of fruit, although there is a Chenin-like note of quince. This is one of Mollard's most interesting wines of the vintage, and should prove fascinating to follow over at least the next 5-6 years.” Wine Advocate 91 points

The Blanc de Noirs "Les Maillerettes" bottling is the more dark and brooding than the Blanc de Blancs, with just-ripe blackberry, mushroom, and forest floor aromas dominating the nose.  On the palate it's as crisp and refreshing, but with a bit more body and depth than the Blanc de Blancs.  It opens with bright citrus flavors, but quickly transitions into strawberry and blackberry fruit, and a savory, mushroomy quality. 

The lieu-dit gets its name because it’s the “mother plot,” the vineyard from which Paillard selects cuttings to propagate the rest of its Pinot Noir vineyards and maintain the genetic identity of its holdings. In a village dominated by Pinot Noir, it’s especially important that their Pinot clones be not only excellent, but also unique to them.

While this would be fantastic as an aperitif or on its own like any good Champagne, the Blanc de Noirs will really shine with serious food - think duck, salmon, mushroom risotto - anything with earthy flavors and an unctuous texture to play against the crisp acidity and bracing effervescence.

Pierre Paillard's Blanc de Blanc "Act 1" 2007, so named to stay within a legal loophole in France's vintage designation system, opens with a sophisticated whiff of white flowers and fresh almonds.  Aromas of fresh pear, golden apple, and brioche come in as well.  On the palate it's lemony and zippy, with a beautiful minerality and yeastiness on the finish.

Bouzy is a Grand Cru village that grows mostly Pinot Noir, and the Act 1 Blanc de Blancs is one of only two all-Chardonnay Champagnes made in Bouzy.  This is a single-vineyard to boot, from the "Les Mottelettes" lieu-dit vineyard.  Blanc de Blancs is always thought to be at the top of the prestige Champagne hierarchy.  It’s a little lighter in body, more luxurious, and often a bit more expensive than bottlings blended with the red grapes Pinot Noir and Pinot Meunier.  

This is a Blanc de Blancs that delivers all of that class and sophistication at far less than what you would normally pay for a single-vintage, 100% Chardonnay Champagne from all Grand Cru fruit.  There is a bit more power and concentation here than in the Brut NV, but it retains all of the signature Paillard sparkle and fun.  Potato chips and popcorn are always great matches with Champagne, but anything crispy and golden would be especially wonderful with this beautiful Blanc de Blancs.

"Disgorged January 25, 2012. Pale yellow-gold. Orchard and pit fruits on the toasty, gently spicy nose and in the mouth. Musky pear and peach pit flavors show a refreshingly bitter quality and pick up a buttery nuance with air. Finishes chewy and long, with lingering toastiness and a hint of anise. This Champagne has the heft to handle full-flavored food like strong cheeses or a buttery poultry dish."International Wine Cellar 90 points

Morgeot is Chassagne’s largest 1er Cru vineyard and, truth be told, much of it is better for Pinot Noir than Chardonnay.  But, winemaker Sébastian Lamy crafted a beautiful white Moregeot in 2011.  Generous aromas of ripe, spicy, pear and hazelnut with just a touch of earthy reduction open the show.  Then flavors of pear, grilled nut, and a hint of cherry dance on the palate with fantastic mid-palate energy.  The finish is long and pure with orchard fruits, butter, and chalk lingering on and on.  A great Morgeot and delicious bottle of wine.

A green fruit, citrus and pear nose merges gracefully into refined, pure and focused flavors that are also a bit more powerful than usual though there is plenty of the hallmark minerality and vibrancy on the impressively long and fine finish. Sylvan considers this his top wine, and I know folks who have served it blind against Leflaive's Folatieres and seen most people prefer it. Certainly, he has crafted a wonderful wine in 2009. As you'd expect, here you'll find plenty of 2009's big ripeness here, but also the fine acid/mineral character of classic white Burgundy. Apple and stone fruits, a touch of lime skin, fresh butter and hazelnut flavors and aromas all swirl in a smooth-textured wine with just the right amount of acidity at the end. Enjoyable now with rich foods and sure to improve over the next 5-10 years.

While Sylvan considers Folatieres his best wine, year-after-year, it's the 1er Cru Les Perrieres that takes the prize for me. Perhaps a smidge less concentrated than Folatieres, but even more mineral, precise, and defined to my taste. A wonderfully complex nose of chalk, limestone, lime, apple, and a bunch of other stuff I can't name. In the mouth, the wine is pure and deep with ripe stone fruit, melon, minerals, and emerging nut and fresh butter notes. Long and very persistent on the finish. A great wine, but not much at all available.

As Clive Coates says, "Folatieres is a fullish, meaty, mineral wine with plenty of weight of fruit and good grip - a typical Puligny permier cru, in fact."  Sylvain Bzikot's Folatieres is among the best I know with the fine acid/mineral character of a classic white Burgundy vintage in a nicely round, accessible, package.  Apple and stone fruits, a touch of lime skin, fresh butter and hazelnut flavors and aromas all swirl in a smooth-textured wine with just the right amount of acidity at the end.  The expected rich and creamy texture is a touch more translucent, precise, and pure in the excellent 2010 vintage, making this the most delicious example of Folatieres from Sylvain yet. 

I know people who have put this in blind tastings with Domaine Leflaive's Folatieres (selling for 3x the price) and seen Sylvain's come out on top!  Enjoyable now with rich foods and sure to improve over the next 10+ years.
