A terrific 2011 from Pascal Maillard that gives just a bit more weight and spice than the 2010 but still retains transparency and freshness.

The wine opens with cool and elegant aromas of pure Pinot fruit - cherries, red berries, fresh mushroom - accented by hints of wood smoke and spice that come from the grapes (no new oak here).  In the mouth, round and fully flavored with cranberry and cherry fruit, hints of violets, a dash of spice cookie and a touch of cola in the mid-palate before darker fruit, smoke, mineral and juicy acids well up on the long, refreshing finish.  There's enough fruit and soft acidity here to make it enjoyable to just sip with a chill, but this will gain weight with time and take on more and more complexity.  A fantastic match for salmon, poached chicken, or grilled mushrooms.

Even more than in the past, this is as fine a bottle of Pinot Noir as we sell for $30 or less. Pascal farms five different parcels in Chorey-les-Beaune and vinifies each on its own.  Every winter, importer Olivier Daubresse works with Pascal to create a selection from the five tanks that demonstrates the best balance of forward fruit, earth, and ripe tannins. The 2009 vintage is, quite simply, the best Chorey Rouge Pascal has ever made.

Give it a swirl and you’ll find big, luscious, aromas of black and Bing cherry, red currant, Asian 5 spice, dark coffee and smoke.  In the mouth it’s rich and powerful for a village wine with velvety spiced raspberry and cherry fruit, spice cake, roasted coffee and grilled mushroom flavors.  Ripe and round in the middle, the wine snaps into precise, minerally, focus on the back palate and finish as notes of smoky mineral, crisp raspberry, and cocoa powder linger over fine-grained tannins. My note from January 2012 reads “That’s a winner.  Buy lots.”  Best advice I can give you.

We carry Pascal Maillard's Chorey-les-Beaune Blanc every year, and it's always a big customer favorite. So, it's easy to forget that this is something of a rarity - only a tiny amount of Chorey-les-Beaune is actually white!

The campfire and smoke notes that marked this wine on release have subsided with a little time in bottle, leaving behind a wonderful nose of crisp apple, lemon oil, fresh butter, and a touch of spice.  In the mouth, the texture is just stunning – sleek and glyceryl, mouthfilling but with great lightness.  The flavors are a complex blend apricot, peach, apple, salted caramel, and butter with hints of chalk and fresh mint peeking out on the long, juicy, finish.  The overall impact is of great richness but lovely vivacity and the butter and chalk notes call to mind an excellent Mersault.  A delicious bottle to enjoy right now by itself or with roasted poultry or seafood, and likely to keep improving for 5 years or more.
